Sri Lankan Coconut Roti Recipe
Ingredients
- 2 cups all-purpose flour
- 1 cup grated coconut
- 1/2 cup water (or as needed)
- 1/2 teaspoon salt
- 1 tablespoon coconut oil (for cooking)
Instructions
- In a mixing bowl, combine all-purpose flour, grated coconut, and salt.
- Add water gradually and knead until you get a soft dough.
- Divide the dough into small balls.
- Flatten each ball into a round shape, approximately 1/4 inch thick.
- Heat a skillet or griddle over medium heat.
- Brush the skillet with coconut oil and cook the rotis on both sides until golden brown.
- Remove from heat and serve hot with your favorite curry or sambal.
