Sri Lankan Kiribath Recipe
Ingredients
- 1 cup white rice
- 3-4 cups water
- 1 cup coconut milk
- 1/2 teaspoon salt
Instructions
- Rinse the rice thoroughly and drain.
- In a pot, bring water to a boil and add the rice.
- Reduce the heat to low and cook the rice until it becomes soft and fully cooked.
- Once the rice is cooked, add coconut milk and salt, stirring continuously.
- Continue cooking and stirring until the mixture thickens and becomes creamy.
- Transfer the mixture to a flat serving dish and flatten it with a spatula.
- Let it cool for a while, then cut into diamond-shaped pieces.
- Serve warm with your favorite curry or sambal.
