Sri Lankan Hoppers Recipe
Ingredients
- 2 cups rice flour
- 1 cup coconut milk
- 1/2 teaspoon active dry yeast
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- Water, as needed
Instructions
- Dissolve yeast and sugar in warm water, let it rest for 10 minutes until frothy.
- In a mixing bowl, combine rice flour, coconut milk, salt, and the yeast mixture.
- Whisk until smooth and let the batter ferment for 2-3 hours or overnight.
- Heat a hopper pan or non-stick skillet over medium heat, lightly grease it with oil.
- Pour a ladleful of batter into the pan, swirl the pan to spread the batter evenly.
- Cover and cook for 3-4 minutes until the edges turn crispy and golden brown.
- Serve hot with your favorite curry or sambal.
