  1. Dissolve yeast and sugar in warm water, let it rest for 10 minutes until frothy.
  2. In a mixing bowl, combine rice flour, coconut milk, salt, and the yeast mixture.
  3. Whisk until smooth and let the batter ferment for 2-3 hours or overnight.
  4. Heat a hopper pan or non-stick skillet over medium heat, lightly grease it with oil.
  5. Pour a ladleful of batter into the pan, swirl the pan to spread the batter evenly.
  6. Cover and cook for 3-4 minutes until the edges turn crispy and golden brown.
  7. Serve hot with your favorite curry or sambal.
