  1. In a large pot, combine grated ginger, sugar, and water.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.
  3. Remove from heat and let it cool.
  4. Strain the mixture to remove ginger solids.
  5. Add lemon juice to the strained liquid and mix well.
  6. Chill in the refrigerator for at least 2 hours.
  7. Serve cold and enjoy Sri Lankan Ginger Beer!
